Stelvio cheese is a typical mountain cheese made from fresh, pasteurized milk from the high pastures of the Stelvio Valley at the foot of the Stelvio Pass (2,758 m). It is produced according to the best artisanal tradition and received the prestigious DOP (Protected Designation of Origin) recognition in 2003, certifying both the quality and historical authenticity of the cheese. Stelvio Stilfser has a reddish-brown rind and irregular, small holes. Its soft, slightly elastic texture and typical, intensely aromatic taste make it a unique specialty. Stelvio cheese is excellent for melting, on bread, or as an alternative for fondue, and is a great addition to any cheese board.
